Corned Beef and Cabbage Rolls

This appetizers is a twist to the classic Rueben sandwich while keeping in mind the St. Patricks Day flavors of the traditional corned beef and cabbage dish.

Ingredients

Corned beef 1 Pound , precooked and shredded
Cabbage head 1/2 , cored and thinly sliced
Sweet onion 1/2 , thinly sliced
Celery stalks 2 , thinly sliced
Butter 3 Tablespoon
Salt and pepper To Taste
Egg roll wraps 16
Monterey jack cheese 8 Ounce
Egg 1 (((beaten)))
Thousand island dressing 3/4 Cup (12 tbs)

Directions

GETTING READY

1. Preheat oven to 400 degrees.

2. Thinly slice cabbage, sweet onion and celery stalks.

MAKING

3. Preheat a saute pan over medium-high heat and add in the butter, cabbage, sweet onion and celery. Stir and saute for 5 minutes or until onions are translucent.

4. Season with salt and pepper. Cook for an additional 2 minutes then remove the pan from heat.

5. Take 1 egg roll wrap and place it down on a cutting board in a diamond shape.

6. Place about 3 tablespoons of corned beef on the egg roll, then about 1 tablespoon of the cabbage and onion mixture.

7. Top it with a tablespoon of Monterey Jack cheese.

8. Take the bottom of the diamond and tightly fold over the filling.

9. Fold each side in and seal the top by brushing with a little egg and folding it over to make a roll shape. Repeat the process for the remaining rolls.

10. Place the rolls on a cooling rack that is placed onto a baking sheet.

11. Brush egg over the tops of each roll to help the roll brown.

12. Place into the oven and bake for 15 minutes or until the rolls become golden brown.

SERVING

13. Cut each roll on a diagonal and serve along side with thousand island dressing.

TIPS

Rolls can be fried rather than baked which will create a crunchier texture.

Have oil heated at 375 degrees and fry for 3 minutes on first side then 2 minutes on other side, or until brown.

Omit brushing the top of the roll with the egg if frying.
