Papao Ni Gravy Ma Cutlets

  Ripe papaya 1 Medium
  Kashmiri red chillies 6
  Turmeric 1⁄2 Inch
  Fresh ginger 1⁄2 Inch
  Cumin seeds 1⁄2 Teaspoon
  Chopped cilantro 2 Tablespoon
  Sugar 2 Tablespoon
  Onion 1 Large
  Tomato 1 Large
  Tomato sauce 1 Cup (16 tbs)
  Sour lime 1
  Salt To Taste
  Oil 2 Tablespoon

1. Skin papaya, deseed and cut the flesh into large pieces.
2. Grind the spices with the lime juice and then grind the onion and tomato to a pulp.
3. Place two tablespoons of oil in a saucepan or vessel. Heat and fry the ground masala and add the onion and tomato pulp and fry for 5 minutes till red. Put in the papaya pieces, salt to taste and half a cup of water and shake the vessel from side to side and allow to simmer for 10 minutes. Taste for salt. Add the tomato sauce.
4. Serve the hot gravy over freshly fried cutlets, or serve separately, as desired. Garnish with coriander leaves.
