Basic Sweet Rolls
|Milk||1 1⁄2 Cup (24 tbs)|
|Sugar||1⁄3 Cup (5.33 tbs)|
|Shortening||1⁄4 Cup (4 tbs)|
|Dry yeast||1 Tablespoon|
|Lukewarm water||1⁄2 Cup (8 tbs)|
|All purpose flour||7 Cup (112 tbs)|
Scald milk, and pour into large bowl.
Add 1/3 cup sugar, shortening and salt, and stir till shortening is melted.
Cool to lukewarm.
Meanwhile, sprinkle 1 teaspoon sugar and yeast in lukewarm water.
Let this mixture stand 10 minutes.
Stir it with fork, and add with eggs to lukewarm milk mixture.
Stir well; then beat in 3 cups flour.
Add remaining flour, working in the last of it by hand.
Turn dough onto lightly floured board.
Knead until smooth, about 5 minutes.
Shape dough into ball, and place in lightly greased bowl.
Grease top slightly to prevent drying; cover, and let stand in warm place until doubled in bulk, about 1 1/2 hours.
Punch dough down after it has risen, and turn onto lightly floured board.
Divide into 4 equal parts.
Form each into 2 smooth balls, cover and let rest for 10 minutes to make dough easier to work.
Shape, let rise and bake according to previous directions.
