Savory Veal Roll

Ingredients
  Rolled boned veal shoulder 4 Pound
  All purpose flour 6 Tablespoon
  Dry mustard 1 Tablespoon
  Brown sugar 1 Tablespoon
  Salt 2 Teaspoon
  Poultry seasoning 1 Teaspoon
  Pepper 1⁄8 Teaspoon
  Vegetable oil 2 Teaspoon
  Onion 1 , finely chopped
  Celery 1⁄4 Cup (4 tbs), finely chopped
  Parsley 2 Tablespoon, finely chopped
  Water 1⁄2 Cup (8 tbs)
  Cider vinegar 2 Tablespoon
  Prepared horseradish 2 Teaspoon
Directions

MAKING
1) Onto the veal, rub together the flour, mustard, sugar, poultry seasoning and pepper
2) Keep some remaining flour for later
3) Into a kettle or dutch oven, brown the meat
4) Add the onion, celery, parsley, wine vinegar
5) Cover with a lid and simmer for 2 1/2 hours till the meat is tender
6) Onto a carving board, place and the meat and keep aside
7) Strain the stock into a measuring jar and allow to rest for a minute
8) Skim off the fat from the top of the liquid
9) Add water to the broth and return to the kettle or dutch oven 10) Cook till the gravy is cooked through and is thickened
11) Add in the horseradish and stir well

SERVING
12) Serve the carved meat with the gravy
