Pork Cutlets With Sorrel

Ingredients
  Pork cutlets 12 Ounce (4 Pieces)
  Butter 2 Teaspoon
  Shallots 2 , thinly sliced
  Minced fresh mint 2 Tablespoon
  Sorrel 1 Bunch (100 gm), chopped
  Dry white wine 1⁄4 Cup (4 tbs)
Directions

GETTING READY
1) Wash the pork and place on paper towels.
2) Place plates in warm oven.

MAKING
3) In a pan, add butter and heat.
4) Mix in pork and shallots and cook each side till tender and brown.
5) Transfer to warm plates in oven.
6) In the pan drippings, stir in mint and sorrel and cook till soft.
7) Pour in the wine and stir well for 4 to 5 minutes to moisten and scrape out bits of meat.
8) Blend sauce till smooth, and add 1 to 2 tablespoons water if needed.
9) Transfer sauce back to pan and heat.
