Smoked Salmon Pinwheels

Ingredients
  Butter 3 Ounce, softened (75 g)
  Lemon juice 2 Teaspoon (10 ml)
  Parsley 2 Teaspoon, freshly chopped (10 ml)
  White bread loaf 1 Pound, crusts removed and thinly sliced (450 g)
  Smoked salmon 6 Ounce, thinly sliced (175 g)
Directions

MAKING
1. In a large bowl, place the butter, lemon juice and parsley and beat well till evenly mixed together
2. Spread this mixture on top of the slices of bread and place the salmon on top. Roll up the bread slices evenly
3. For later use, these can be frozen by wrapping them in foil and arranging them in a rigid labeled container

SERVING
4. Serve the salmon sandwiches fresh
5. If you are using the frozen sandwiches, remove them from the freezer and set aside to thaw for four hours before serving
