Beef Rolls

Ingredients
  Minute steaks 1 1⁄2 Pound (6 Steaks)
  Mushrooms 1⁄2 Pound, chopped
  Chopped onions 1⁄4 Cup (4 tbs)
  Chopped parsley 2 Tablespoon
  Garlic 1 Clove (5 gm), minced
  Salt 1 Teaspoon
  Freshly ground black pepper 1⁄2 Teaspoon
  Special oil 2 Tablespoon
  Dry red wine 1 Cup (16 tbs)
  Tomato paste 1 Tablespoon
Directions

Have all the visible fat trimmed and the meat pounded very thin.
Mix together the mushrooms, onions, parsley, garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper.
Spread on each steak and roll up.
Tie ends with white thread or secure with toothpicks.
Heat the oil in a skillet; brown the rolls well on all sides.
Mix in the wine, tomato paste and remaining salt and pepper; cover and cook over low heat 1 hour.
