|Ground uncooked chicken||1 1⁄2 Cup (24 tbs)|
|Butter||3⁄4 Cup (12 tbs), melted|
|Flour||1⁄2 Cup (8 tbs)|
|Bread crumbs||2 Cup (32 tbs)|
Mix chicken, salt, pepper, nutmeg and 5 tablespoons butter.
Chill for several hours.
Spread flour on sheet of waxed paper.
Beat egg lightly in shallow container; add oil and water.
Shape chicken mixture into 8 patties.
Dip patties into flour then into egg mixture.
Coat with bread crumbs.
Heat remaining butter in large skillet; brown patties slowly on both sides.
