Crackling Brown Rolls

Ingredients
  Whole wheat flour 3 Cup (48 tbs)
  Active dry yeast 1 Tablespoon
  Bran 1⁄2 Cup (8 tbs)
  Wheat germ 2 Tablespoon
  Lecithin granules 2 Tablespoon
  Bone meal 1 Teaspoon
  Cottage cheese 2 Cup (32 tbs)
  Safflower oil 1⁄4 Cup (4 tbs)
  Water 1⁄4 Cup (4 tbs)
  Honey 1 Teaspoon
  Egg 1 , beaten
  Whole grain cornmeal 1⁄2 Cup (8 tbs) (To Dredge)
  Skim milk 2 Tablespoon (To Brush)
  Sesame seeds 1 Tablespoon (To Sprinkle)
Directions

MAKING
1. In a large mixing bowl, combine a cup of flour with yeast, bran, wheat germ, lecithin granules and bone meal
2. In a medium saucepan, mix together cottage cheese, oil, water and honey and stir till lukewarm over medium flame
3. Add it to the dry ingredients along with the beaten egg; with an electric mixer, beat on low speed, scraping the sides of the bowl, then beat at high speed for three minutes
4. Add the remaining two cups of flour by hand, turn out on a flour dusted surface, invert a bowl over it and let it rest for ten minutes
5. Shape it into sixteen balls and them on a cookie sheet with cornmeal sprinkled on it, with about two inches of gap between two balls
6. Brush the rolls with milk, sprinkle sesame seeds on top, cover and allow to rise for almost forty five minutes, till double in bulk; bake for twelty minutes at 350°F

SERVING
7. Serve as required
