Spinach Ricotta Roll Ups

Ingredients
  Frozen chopped spinach 10 Ounce, thawed and drained (1 Package)
  Olive oil/Canola oil 1 Tablespoon
  All purpose flour 1 Tablespoon
  1% low fat milk 1⁄3 Cup (5.33 tbs)
  Ground nutmeg 1⁄8 Teaspoon
  Egg whites 3
  Part skim ricotta cheese 1 Cup (16 tbs)
  Chopped herbs 2 Tablespoon (Such As Parsley, Basil, Or Thyme)
  Grated parmesan cheese 1 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

GETTING READY
1. Preheat the oven at 375°F.
2. In a food processor or using a knife, chop finely the spinach. Transfer it to a bowl.

MAKING
3. Take a small saucepan and mix the oil with flour and cook about 2 minutes on medium flame. Keep stirring. Remove the saucepan from the heat.
4. Add milk, nutmeg, pinch of salt and pepper. Put in again on heat and bring to a boil. Cook for 1 minute or until smooth and thickened.

SERVING
5. Serve is a serving dish.
