Spinach Ricotta Roll Ups
|Frozen chopped spinach||10 Ounce, thawed and drained (1 Package)|
|Olive oil/Canola oil||1 Tablespoon|
|All purpose flour||1 Tablespoon|
|1% low fat milk||1⁄3 Cup (5.33 tbs)|
|Ground nutmeg||1⁄8 Teaspoon|
|Part skim ricotta cheese||1 Cup (16 tbs)|
|Chopped herbs||2 Tablespoon (Such As Parsley, Basil, Or Thyme)|
|Grated parmesan cheese||1 Tablespoon|
1. Preheat the oven at 375°F.
2. In a food processor or using a knife, chop finely the spinach. Transfer it to a bowl.
3. Take a small saucepan and mix the oil with flour and cook about 2 minutes on medium flame. Keep stirring. Remove the saucepan from the heat.
4. Add milk, nutmeg, pinch of salt and pepper. Put in again on heat and bring to a boil. Cook for 1 minute or until smooth and thickened.
5. Serve is a serving dish.
