Surprise Veal Roll Ups

Ingredients
  Veal cutlets 1 (6 1/4 Inch)
  Thin boiled ham slices 3 , cut in half
  Shredded sharp process american cheese 1⁄2 Cup (8 tbs)
  Chopped stuffed green olives 1⁄4 Cup (4 tbs)
  Cooking sherry 1⁄4 Cup (4 tbs)
Directions

Pound cutlets with meat pounder till about double in area; sprinkle with pepper.
Put one piece of ham on each cutlet.
Mix cheese and chopped olives; spread over ham.
Roll veal as for jelly roll; fasten with toothpicks or tie with cord.
Brown meat in butter; cook uncovered over low heat 30 minutes or till tender, turning occasionally to prevent sticking.
Add cooking sherry and heat through.
