Ham and Sweetbread Roll Ups
|Sweetbreads||1 Pound (Fresh Or Frozen)|
|Thin boiled ham slices||6|
|Condensed cream of chicken soup||1 Can (10 oz), condensed|
|Chopped parsley||2 Tablespoon|
|Grated parmesan cheese||1⁄4 Cup (4 tbs)|
Combine 1 quart lightly salted water and vinegar.
Add sweetbreads and simmer (don't boil) 20 minutes or till tender.
Drain; remove membranes.
Spread each ham slice with 1 tablespoon soup; sprinkle with parsley.
Center sweetbreads on ham slices; roll up each and fasten with toothpicks.
Place in shallow baking dish.
Sprinkle with cheese.
Bake in hot oven (400°) 20 minutes or till heated through.
