|Fat||2 Cup (32 tbs) (For deep frying)|
|Enriched flour||1 Cup (16 tbs), sifted|
|Milk||1 Cup (16 tbs)|
|Ground cooked ham||2 Cup (32 tbs)|
|Onion||1 Tablespoon, finley chopped|
|Prepared mustard||2 Tablespoon|
|Egg||1 , beaten|
|Cracker crumbs||1⁄2 Cup (8 tbs)|
Melt butter, blend in flour.
Add salt and milk and cook over low heat until thick, stirring constantly.
Add ham, onion, and mustard.
Shape in croquettes.
Dip in egg, then in crumbs.
Let stand a few minutes.
Fry in deep, hot fat (375°) 7 to 8 minutes, or until brown.
Drain on paper towels.
