This Egg roll with vegetables is a complete healthy meal in itself. A wonderful combination of eggs, tortilla and vegetables it is a wonderful idea for your picnic or day outdoors. A quick and easy cooking option on a lazy Sunday.
Warm the tortilla according to directions. Set aside.
Take a nonstick pan and spary some cooking spray. Put the beaten eggs and let it settle.
Without letting it cook completely place the tortilla on top of it. Let it cook on low heat.
Carefully flip over and add the veggies. Let the tortilla become a little crisp.
Spread some ketchup on top and add salt and pepper to taste.
Wrap up and enjoy.
You always need a company for eggs. I wanted to enjoy them and still be on the go. By company I mean, toast or fork and knife kind of stuff.
