Raw Chard Dolmas

Ingredients
  Barley 1 Cup (16 tbs), soaked
  Onion 1⁄2 Small, chopped finely
  Sea salt 1⁄8 Teaspoon
  Black pepper 1⁄8 Teaspoon
  Coriander seed 1⁄8 Teaspoon
  Dill weed 1⁄2 Teaspoon
  Cumin 1⁄2 Teaspoon
  Fresh mint 1 Tablespoon, chopped finely
  Fresh parsley 1 Tablespoon, chopped finely
  Lemon juice 1 Tablespoon
  Cold pressed olive oil 1 1⁄2 Tablespoon
  Chard leaves 1 Bunch (100 gm)
Directions

GETTING READY
1. Soak the raw barley in water overnight.
2. Wash and clean the chard leaves by soaking it in apple cider vinegar and water.

MAKING
3. In a large bowl mix the barley, onion, sea salt, black pepper, coriander, cumin, dill, mint and parsley.
4. Mix and then add the lemon juice and cold pressed olive oil, toss everything up.
5. Take a chard leaf and place the mixture in the center and roll it up.

SERVING
6. Serve the rolled stuffed chard as a delicious appetizer.
