Caramel Nut Rolls

Ingredients
  Caramel candies 1⁄2 Pound (about 28)
  Butter/Margarine 1⁄4 Cup (4 tbs)
  Half and half/Milk 2 Tablespoon
  Confectioners' sugar 1 1⁄2 Cup (24 tbs)
  Salted peanuts 1 Cup (16 tbs)
  Miniature marshmallows 2 Cup (32 tbs)
  Flaked coconut 1 Cup (16 tbs)
Directions

In 2-qt casserole or mixing bowl, place caramels, butter and half & half.
Microwave at 50% (Medium) 3 to 5 minutes, or until melted and smooth, stirring after 2 minutes, then every minute.
Stir in sugar until smooth, then peanuts.
Stir in marshmallows, using as few strokes as possible.
Sprinkle 2 large sheets of wax paper with coconut.
Spoon half the caramel mixture in strip on each sheet.
Shape into 10- or 12-in rolls, using wax paper to help shape; coat well with coconut.
Wrap and refrigerate.
To serve, cut into 1/2-in slices.
