Potato Croquettes

Ingredients
  Milk 1 Tablespoon
  Butter 1 1⁄2 Tablespoon
  Egg yolks 2
  Potatoes 1 Pound, cooked and mashed
  Freshly ground black pepper 1
  Chopped fresh parsley 1 Tablespoon
  Egg 1 , beaten
  Breadcrumbs 1⁄2 Cup (8 tbs)
  Oil 2 Cup (32 tbs) (For Frying)
Directions

Heat the milk in a pan and add the butter.
Off heat, stir until the butter has melted.
Stir in egg yolks.
Beat in mashed potatoes, pepper and parsley.
Divide into portions and shape into croquettes.
Dip in beaten egg and roll in breadcrumbs.
Deep-fry in hot oil until brown.
Drain on paper before serving.
The croquettes may be kept warm in a low oven or made beforehand and reheated.
