Viennese Chocolate Rolls
|Ground blanched almonds||2 Cup (32 tbs)|
|Cooking chocolate||1 Cup (16 tbs), grated (About 1 1/2 Packages, 4 Ounces Each)|
|Sugar||1⁄2 Cup (8 tbs)|
|Diced citron||1⁄2 Cup (8 tbs)|
|Almonds||1⁄3 Cup (5.33 tbs), blanched and slivered|
|Fine granulated sugar||1⁄2 Cup (8 tbs) (White Or Colored)|
Combine ground almonds and chocolate.
Beat egg and sugar until fluffy.
Add to almond-chocolate mixture together with citron and slivered almonds.
Heat mixture in top part of double boiler over hot water until warm, stirring constantly until well blended.
Lightly spread a baking board or a sheet of wax paper with sugar.
Put mixture on it and, between sugared hands, shape into a sausage about 11 inches long.
Roll in fine sugar.
Dry in cool place overnight.
To serve, cut into thin slices.
