Potato Croquettes

Ingredients
  Mashed potatoes/Riced potatoes 2 Cup (32 tbs)
  Salt 1⁄2 Teaspoon
  Melted butter/Margarine 2 Tablespoon
  Cayenne 1⁄8 Teaspoon
  Egg yolks 2
  Milk 2 Tablespoon
  Fine dry crumbs 1⁄2 Cup (8 tbs)
  Fat 2 Cup (32 tbs) (For Frying)
Directions

1. Set a heavy frying kettle on a warm part of the range. Fill it half full of fat and let it slowly heat at 390° F., or hot enough to brown a 1-inch cube of bread in 30 to 40 seconds.
2. Mix potatoes, salt, melted butter or margarine and cayenne. Press into a croquette shape.
3. Beat egg yolks and add 2 tablespoons milk. Dip croquettes into crumbs, then into egg, then into crumbs again.
4. Fry in deep fat until browned. A frying basket will help to keep the croquettes in shape. Drain on paper towels.
