Deli Beef Rolls
|Onion||1⁄2 Cup (8 tbs), chopped|
|Celery||1⁄3 Cup (5.33 tbs), chopped|
|Shredded carrot||1 Cup (16 tbs), divided|
|Herb seasoned stuffing mix||1 1⁄4 Cup (20 tbs)|
|Chopped walnuts||1⁄4 Cup (4 tbs)|
|Hot water||1⁄4 Cup (4 tbs)|
|Cooked beef roast slices||1 Pound (1/4 To 1/2 Inch Thick)|
|Beef gravy||3⁄4 Cup (12 tbs)|
|Worcestershire sauce||1⁄2 Teaspoon|
In 1-quart casserole, combine onion, celery, 1/4 cup carrot and the butter.
Microwave at High for 3 to 4 1/2 minutes, or until vegetables are tender-crisp.
Stir in stuffing mix and walnuts.
Mix in water.
Place about one-fourth of stuffing on each slice of beef.
Roll up, enclosing stuffing.
Place beef rolls seam-side down in 9 x 5-inch loaf dish.
Place gravy in 1-cup measure.
Stir in remaining 2 tablespoons carrot and the Worcestershire sauce.
Pour gravy over beef rolls.
Cover with wax paper.
Microwave at 70% (Medium High) for 12 to 18 minutes, or until center of each beef roll is hot, rotating dish once.
