Egg and Mustard Ham Rolls
|Whole meal rolls||4|
|Wholegrain mustard||2 Tablespoon|
|Butter||1⁄2 Ounce (15 Gram)|
|Button mushrooms||1 3⁄4 Ounce, sliced (50 Gram)|
|Onion||1 , chopped|
|Thin ham slices||1 3⁄4 Ounce, cut into strips (50 Gram)|
|Freshly ground black pepper||To Taste|
|Cheddar cheese||2 Ounce, grated (60 Gram)|
1. Cut a slice from the top of each bread roll; set aside and reserve. Scoop out the center, leaving a thin shell (reserve crumbs for another use). Spread inside of each roll with mustard.
2. Melt butter in a frying pan over a medium heat and cook mushrooms and onion for 2-3 minutes. Add ham and cook for 2 minutes longer. Divide mixture between rolls and sprinkle with black pepper. Break an egg into a small bowl, then slide it into a roll. Repeat with remaining eggs and rolls. Sprinkle with cheese and replace the tops. Place rolls on a baking tray and bake at 180°C/350°F/Gas 4 for 25 minutes or until whites are firm.
