Sweet Breakfast Rolls
|Pancake mix||2 Tablespoon (Alpine Bakery)|
|Heavy cream||2 Tablespoon|
|Sweet and low||1 Gram (1 Packet)|
|Vanilla extract||1⁄4 Teaspoon|
|Cream cheese||4 Ounce|
1. Beat eggs with cream. Add pancake mix, sweetener, cinnamon and vanilla, beat again. Don't worry about the lumps.
2. Filling: soften cream cheese in microwave. Add cinnamon & sweetener and mix well.
3. Pour 1/4 of egg mixture into a buttered non-stick skillet on medium-high heat. Tip skillet so egg mixture covers bottom. Cook until solid and slightly browned, flip (ever so carefully) and cook until slightly browned. Remove to plate and repeat, making 4 thin omelets.
4. Spread 1/4 of cream cheese mixture over each omelet and roll up. Serve.
