Savory Lamb Roll
|All purpose flour||1 Tablespoon|
|Garlic||1 Clove (5 gm), minced|
|Lemon juice||1 Tablespoon|
|Lamb shoulder roast||4 Pound, rolled (boned)|
|All purpose flour||3 Tablespoon|
Combine 1 tablespoon flour, salt, dash pepper, garlic, and lemon juice.
Spread over meat.
Place lamb on large sheet of heavy foil: wrap securely.
Place in shallow roasting pan.
Roast in hot oven (425°) about 3 hours or till meat thermometer registers 175° to 180°; open foil last 30 minutes of roasting.
Remove meat to warm serving platter.
Pour juices into large measuring cup; add water to make 1 3/4 cups liquid and transfer to saucepan.
Combine 3 tablespoons flour and 34 CUP cold water; stir into juices.
Cook and stir till thick and bubbly.
Add dash of kitchen bouquet, if desired; season.
