Fish Roll Ups Hollandaise

Ingredients
  Fish fillets 6 (Fresh / Frozen)
  Chopped shallots/Green onion 2 Tablespoon
  Butter 2 Tablespoon
  Frozen chopped spinach 10 Ounce, thawed and drained (1 Package)
  Dried tarragon 1⁄2 Teaspoon, crushed
  Salt 1⁄4 Teaspoon
  Pepper 1⁄8 Teaspoon
  White wine/Water 1⁄4 Cup (4 tbs)
  Lemon slices 2
  Hollandaise sauce 1⁄2 Cup (8 tbs) (Easy Type, Adjust Quantity As Needed)
Directions

Thaw fish, if frozen.
In skillet cook shallots or green onion in butter till tender.
Remove from heat; stir in spinach, tarragon, salt, and pepper.
Lay fish fillets on flat surface; spread spinach evenly onto fish.
Roll up jelly roll fashion, starting with short end.
Secure with wooden picks, if necessary.
Arrange rolls seam side down in 10-inch skillet.
Add wine or water and lemon.
Cover and simmer 12 to 15 minutes or till fish flakes easily when tested with fork.
Transfer to platter; top with Easy Hollandaise Sauce.
