Rice And Cheese Croquettes

Ingredients
  Rice 1 Cup (16 tbs)
  Grated sharp american cheese 3⁄8 Pound (1 1/2 Cups)
  Egg 1 , beaten
  Salt 1 1⁄2 Teaspoon
  Pepper 1 Dash
  Dried bread crumbs 1⁄2 Cup (8 tbs)
  Eggs 2 , beaten with 2 tablespoons water
  Water 2 Tablespoon
Directions

Follow directions on package for cooking rice.
The newest method of cooking which conserves food values calls for no washing, and cooking in a double boiler, Cook until tender, and do not rinse.
Combine with cheese, the 1 beaten egg, salt, and pepper.
Chill.
Shape mixture in balls, roll in crumbs, then in beaten egg mixture, then in crumbs.
Fry until golden brown in deep fat heated to 375° F.
Drain on absorbent paper and serve hot with Tomato Sauce or with jelly.
