Almond Turkey Cutlets
|Ground toasted almonds||1⁄2 Cup (8 tbs)|
|Dry bread crumbs||1⁄2 Cup (8 tbs)|
|Chopped fresh parsley||2 Tablespoon|
|Cooked turkey breast slices||3⁄4 Pound (Each 1/4 Inch Thick)|
|Sour cream||1⁄3 Cup (5.33 tbs)|
|Sliced almonds||1⁄4 Cup (4 tbs), toasted|
1. Place margarine on 12-inch plate. Microwave uncovered on high 20 to 30 seconds or until margarine is melted; spread evenly over plate. Beat egg whites until foamy. Mix ground almonds, bread crumbs, parsley and salt. Dip turkey into egg whites; coat evenly with crumb mixture.
2. Arrange turkey in single layer on plate. Cover with waxed paper and microwave on high 7 to 9 minutes, turning turkey over and rearranging with uncooked parts to outside edge of plate after 4 minutes, until juices run clear.
3. Microwave sour cream in 1-cup measure uncovered on medium (50%) 2 to 3 minutes, stirring every minute, just until warm. Spoon over turkey; sprinkle with sliced almonds.
