Spinach Fish Rolls
|Spinach stalks||4 Large|
|Garlic||1 Clove (5 gm)|
|Chopped parsley||1 Tablespoon|
|Butter||1⁄2 Ounce (15g, plus little extra)|
Put spinach leaves in saucepan of boiling water, cook 1 minute, drain, cut away stalks.
Pat leaves dry with kitchen paper.
Beat butter until light and creamy, add crushed garlic, parsley, salt and pepper, mix well.
Remove skin and bones from fillets.
With skin side up, spread butter mixture evenly over fillets.
Roll up fillets firmly.
Place one fish roll at one end of a spinach leaf, fold sides of spinach leaf over fish roll.
Roll up to enclose fish completely.
Repeat with remaining fish rolls and spinach.
Place completed fish rolls in greased ovenproof dish.
Dot with extra butter.
Bake in moderately hot oven 30 minutes.
