Whistle Stop Ham Croquettes
|Corn flakes/1 1/4 cups corn flake crumbs||5 Cup (80 tbs) (Null)|
|Finely chopped onions/Null||2 Tablespoon (Null)|
|Eggs/Null||2 , beaten (Null)|
|Catsup/Null||1⁄3 Cup (5.33 tbs) (Null)|
|Dry mustard/Null||1⁄2 Teaspoon (Null)|
|Ground cooked ham/Null||1 1⁄2 Pound (Coarsely Ground)|
|Egg/Null||1 , beaten (Null)|
|Water/Null||2 Tablespoon (Null)|
1. If using Corn Flakes, crush into fine crumbs. Reserve 3/4 cup of the Crumbs; combine remaining 1/2 cup with onions, the 2 eggs, catsup and mustard; mix well. Add ham, mixing lightly. Shape one-fourth cupfuls of mixture into croquettes.
2. Combine the 1 beaten egg and water. Dip croquettes in egg mixture; coat evenly with remaining Corn Flake Crumbs.
3. Fry in deep hot fat (375° F.) about 4 minutes or until golden brown. Drain on absorbent paper. Serve hot with Delicate Parsley Mustard Sauce spooned over.
