Buttermilk Rolls

Ingredients
  Buttermilk 1 Cup (16 tbs)
  Safflower oil 1 Teaspoon
  Dry yeast 1 Teaspoon
  Honey 2 Teaspoon
  Baking soda 1⁄4 Teaspoon
  Salt 1⁄2 Teaspoon
  Whole wheat flour 1 Cup (16 tbs)
  Unbleached flour 1 Cup (16 tbs)
Directions

Warm buttermilk over low heat (if overheated, it separates).
In bowl of electric mixer, combine buttermilk, oil, yeast, honey, baking soda, salt, and whole wheat flour.
Beat at medium speed for 3 minutes.
Stir the unbleached flour into the mixture.
Turn out onto a lightly floured pastry cloth.
Knead until smooth and elastic.
Roll out to 1/2-inch thickness.
Cut into desired shapes.
Place on a greased baking sheet.
Brush tops with melted butter or safflower oil.
Cover loosely with a tea towel.
Let double.
Bake at 375° 15-20 minutes or until golden brown.
