Chicken And Ham Croquettes
|Butter/Margarine||2 Tablespoon, melted|
|Soft bread crumbs||3⁄4 Cup (12 tbs)|
|Dry mustard||1⁄2 Teaspoon|
|Ground nutmeg||1 Dash|
|Ground cooked chicken/Turkey||3 Cup (48 tbs)|
|Ground fully cooked ham||1 Cup (16 tbs)|
|Fine dry bread crumbs||1⁄2 Cup (8 tbs)|
|Fat||2 Cup (32 tbs) (For Deep Frying)|
|Caper sauce||1⁄2 Cup (8 tbs) (Adjust Quantity As Needed)|
In mixing bowl combine the 2 beaten eggs, butter, soft bread crumbs, mustard, nutmeg, and pepper.
Add chicken and ham; mix well.
Shape cold chicken mixture into 12 logs, using about 1/4 cup mixture for each.
Dip logs in the remaining beaten egg, then roll in fine dry bread crumbs.
Fry in deep hot fat (365°) for 2 1/2 to 3 minutes.
