Chicken And Ham Croquettes

Ingredients
  Beaten eggs 2
  Butter/Margarine 2 Tablespoon, melted
  Soft bread crumbs 3⁄4 Cup (12 tbs)
  Dry mustard 1⁄2 Teaspoon
  Ground nutmeg 1 Dash
  Pepper 1 Dash
  Ground cooked chicken/Turkey 3 Cup (48 tbs)
  Ground fully cooked ham 1 Cup (16 tbs)
  Beaten egg 1
  Fine dry bread crumbs 1⁄2 Cup (8 tbs)
  Fat 2 Cup (32 tbs) (For Deep Frying)
  Caper sauce 1⁄2 Cup (8 tbs) (Adjust Quantity As Needed)
Directions

In mixing bowl combine the 2 beaten eggs, butter, soft bread crumbs, mustard, nutmeg, and pepper.
Add chicken and ham; mix well.
Chill.
Shape cold chicken mixture into 12 logs, using about 1/4 cup mixture for each.
Dip logs in the remaining beaten egg, then roll in fine dry bread crumbs.
Fry in deep hot fat (365°) for 2 1/2 to 3 minutes.
Drain well.
