Jam Rolls

Ingredients
  Risen sweet bread dough 1 Cup (16 tbs) (1/2 Quantity)
  Grated lemon rind 1 Teaspoon
  Jam 4 Teaspoon
Directions

Work lemon rind evenly into the dough.
Divide into 8 equal pieces.
Roll into balls.
Place well apart on a greased baking sheet.
Cover and let rise for 20 minutes.
Press the handle of a wooden spoon down into the center of each ball to form a hole.
Place a small quantity of jam (about 1/2 teaspoon) in the hole and pinch the dough around it to re-form the ball.
Cover and let rise for a further 15-20 minutes.
Bake toward the top of a moderately hot oven (375°F) for 15-20 minutes, transfer to a cake rack and cool.
