Ham And Vegetable Roll Ups

Ingredients
  Coarsely chopped cucumber 1⁄4 Cup (4 tbs)
  Coarsely chopped tomatoes 1⁄4 Cup (4 tbs)
  Sliced fresh mushrooms 1⁄4 Cup (4 tbs)
  Sliced pitted ripe olives 2 Tablespoon
  Sliced green onions 2 Tablespoon
  Low calorie italian salad dressing 1⁄3 Cup (5.33 tbs)
  Sliced fully cooked ham 6 Ounce (1 Package)
  Lettuce head 4 Large (Outer Leaves)
  Shredded mozzarella cheese 4 Ounce (1 Cup)
Directions

In a small bowl combine cucumber, tomato, mushrooms, olives, and green onion; stir in salad dressing.
Cover and chill for 6 hours or overnight; drain well.
To assemble roll-ups, center two ham slices atop each lettuce leaf.
Top each with 1/4 cup drained vegetable mixture and 1/4 cup shredded mozzarella cheese, Roll up lettuce and ham, turning edges of lettuce in toward center while rolling; secure each roll-up with a wooden pick,
