Date Nut Rolls

  Sugar 2 Cup (32 tbs)
  Evaporated milk 1 Cup (16 tbs)
  Dates 1 Cup (16 tbs), finely chopped
  Vanilla 1 Teaspoon
  Walnuts 3⁄4 Cup (12 tbs), chopped (for rolling)
  Walnuts 3⁄4 Cup (12 tbs), chopped (for rolling)

Combine the sugar and milk in a heavy 2-quart saucepan.
Place over medium heat and stir just until the sugar dissolves.
Cover the pan; bring to a boil and cook 1 minute, or until the sugar crystals are melted down from the sides.
Remove the cover and continue cooking, stirring constantly, to 234°, or until a little of the mixture forms a soft ball when dropped in cold water.
Remove from the heat and add the dates, 1 cup of walnuts, and vanilla; mix well.
Then let cool without disturbing until lukewarm (110°).
Beat until the mixture begins to thicken and lose its gloss.
Turn out onto a buttered plate.
Let stand until it is cool enough to handle.
Then knead a few minutes until very creamy.
Divide the mixture into two parts, then form each into a roll about 1 1/2 inches in diameter.
Spread half of the remaining walnuts out on a sheet of waxed paper.
Roll one log of candy in the nuts to coat, then wrap in the waxed paper and let stand until firm.
Repeat with the remaining roll.
For serving, cut into 1/2-inch slices.
