Spanish Brain Cutlets

Ingredients
  Brains 2 , boiled
  Coriander leaves 1 Tablespoon, finely chopped
  Egg 1 , beaten
  Onion 1 , finely chopped
  Tomato 1 , finely chopped
  Green chili 1 , finely chopped
  Ghee 1
  Salt To Taste
Directions

Mash the brains lightly with a fork.
Mix the beaten egg with the other ingredients and add to the brain.
Divide into six sections and shape them into cutlets.
Leave to dry for an hour or two, then fry the cutlets.
