Date Nut Roll

Ingredients
  Sugar 2 Cup (32 tbs)
  Milk 1 Cup (16 tbs)
  Butter/Margarine 1 Tablespoon, melted
  Chopped dates 1 Cup (16 tbs)
  Vanilla 1 Teaspoon
  Coarsely chopped pecans/Coarsely chopped walnuts 1 Cup (16 tbs)
  Finely chopped pecans/Finely chopped walnuts 1 1⁄2 Cup (24 tbs)
Directions

In a deep, 2 quart, heat resistant, non metallic casserole, combine sugar, milk and butter or margarine.
Heat, uncovered, on roast for 8 minutes or until sugar is dissolved and mixture is boiling.
Stir.
Heat, covered, on roast for 12 to 14 minutes or until mixture reaches 234°F on a candy thermometer.
If a candy thermometer is not available, drop a small amount of the mixture into very cold water.
The mixture should form a soft ball which flattens when removed.
DO NOT PLACE CANDY THERMOMETER IN MICROWAVE OVEN OR USE TEMPERATURE PROBE.
Add dates and stir well.
Heat, covered, on roast for 5 minutes, or until candy again reaches 234° F.
If a candy thermometer is not available, drop a small amount of the mixture into very cold water.
The mixture should form a soft ball which should flatten when removed from the water.
Add vanilla.
Set aside.
Cool candy without stirring until lukewarm (110°F).
Beat until very thick.
Add 1 cup chopped nuts and stir until mixture becomes solid.
Knead until smooth.
Divide into 3 equal portions.
Form each portion into a roll.
Coat each roll with the 1/2 cup chopped nuts.
Wrap in waxed paper and chill.
