Curried Fish Risotto

Ingredients
  Onion 1 Large, chopped
  Oil 2 Tablespoon
  Flour 1 Tablespoon
  Curry powder 3 Tablespoon
  Chicken stock 2 1⁄2 Cup (40 tbs)
  Long grain rice 1 Cup (16 tbs)
  Green pepper 1 , sliced
  Granny smith apple 1 Small, peeled, cored and chopped
  Golden raisins 1 Tablespoon
  Freshly ground black pepper To Taste
  Firm white fish 1 1⁄2 Pound, skinned and boned
Directions

Saute the onion in the oil until soft but not brown.
Stir in the flour and curry powder and cook for 1 minute.
Add the stock, rice, pepper, apple and golden raisins and season to taste.
Cover the pan and simmer for 15 minutes, stirring occasionally.
Cut the fish into bite-sized pieces, add to the curry and simmer for 5 minutes, until rice and fish are cooked.
