Curried Fish Risotto
|Onion||1 Large, chopped|
|Curry powder||3 Tablespoon|
|Chicken stock||2 1⁄2 Cup (40 tbs)|
|Long grain rice||1 Cup (16 tbs)|
|Green pepper||1 , sliced|
|Granny smith apple||1 Small, peeled, cored and chopped|
|Golden raisins||1 Tablespoon|
|Freshly ground black pepper||To Taste|
|Firm white fish||1 1⁄2 Pound, skinned and boned|
Saute the onion in the oil until soft but not brown.
Stir in the flour and curry powder and cook for 1 minute.
Add the stock, rice, pepper, apple and golden raisins and season to taste.
Cover the pan and simmer for 15 minutes, stirring occasionally.
Cut the fish into bite-sized pieces, add to the curry and simmer for 5 minutes, until rice and fish are cooked.
