Lemon Risotto

Lemon Risotto is rice flavored with lemon juice and lemon rind. This is a simple dish prepared with the arborio rice, sweet peas, Parmesan cheese and chicken broth. Join Chef Gerry Castro as he prepares a wonderful zesty and rich lemon risotto!
Ingredients
  Extra virgin olive oil 4 Tablespoon
  Garlic cloves 3 Medium
  Onion 1 Medium, chop
  Arborio rice 1 Cup (16 tbs)
  White wine vinegar 1⁄2 Cup (8 tbs)
  Sweet peas 1⁄2 Cup (8 tbs)
  Butter 1⁄2 Cup (8 tbs)
  Lemon juice 3 Tablespoon
  Chicken broth 1⁄2 Cup (8 tbs)
  Pepper To Taste
  Parmesan cheese 100 Gram
Directions

MAKING
1) In a pan, heat the olive oil and saute the onion and garlic.
2) Then add the rice and stir for 2-3 minutes.
3) Add the white wine vineger and mix well.
4) Add the hot chicken broth, sprinkle freshly ground pepper and cook for 5-10 minutes.
5) Add the lemon zest, cook for a while and add the sweet peas and butter and mix well.
6) Grate over the Parmesan cheese and mix well.

SERVING
7) Plate and serve immediately.
