Garlic Parmesan Risotto
|Reduced-calorie margarine||2 Teaspoon (Tub)|
|Sliced mushrooms||1⁄2 Cup (8 tbs)|
|Chopped onion||1⁄4 Cup (4 tbs)|
|Chopped red bell pepper||1⁄4 Cup (4 tbs)|
|Chopped green bell pepper||1⁄4 Cup (4 tbs)|
|Garlic||2 Clove (10 gm), minced|
|Cooked long grain white rice||1 Cup (16 tbs)|
|Grated parmesan cheese||2 Teaspoon|
1. In medium saucepan, melt margarine; add mushrooms, onion, peppers, and garlic. Cook over medium-high heat, stirring frequently, until onions are translucent, about 2 minutes.
2. Add rice and cheese: combine thoroughly. Garnish with parsley, if desired.
