Risotto With Sweet Sausage And Vegetables

Ingredients
  Olive oil 1 Teaspoon
  Butter 4 Tablespoon
  Onion 1 Small, chopped
  Carrot 1 Small, diced
  Stalk celery 1 , diced
  Bacon 2 Ounce, chopped (Preferably Italian Pancetta)
  Sweet sausage 6 Ounce (Mild One)
  Rice 8 Ounce (Preferably Italian Risotto)
  Beef broth/Consomme 3 1⁄2 Cup (56 tbs)
  Parmesan cheese 1⁄4 Cup (4 tbs)
Directions

Heat in medium-sized skillet.
Add and saute until vegetables become soft.
Remove skin, chop, and add to above, cooking until almost done on a medium heat.
Add to above and saute just until light brown.
On moderate heat, add slowly to above, stirring often, until all the liquid has been absorbed, approx 20-25 minutes.
Remove from heat.
Add to above and serve hot.
