Omelette With Ricotta Cheese (Omelette Con Ricotta)

Ingredients
  Eggs 8
  Water 2 Tablespoon
  Butter 3 Tablespoon
  Onion 1 Small, minced
  Ricotta cheese 1⁄2 Pound
  Parmesan cheese 1⁄4 Cup (4 tbs)
  Parsley 2 Tablespoon, chopped
  Salt To Taste
  Pepper To Taste
Directions

Beat the eggs lightly with the water.
Melt the butter or margarine in a large frypan and saute the onion until golden brown.
Mix together the Ricotta and Parmesan cheese.
Pour the eggs into the frypan.
Sprinkle cheese mixture and parsley over the eggs.
Season to taste with salt and pepper.
Cover and cook over a low heat until eggs are set.
