Ricotta Cheese Filling
|Ricotta cheese/Small curd cottage cheese||4 Cup (64 tbs), pushed through a sieve|
|Sugar||1⁄3 Cup (5.33 tbs)|
|Grated orange peel||2 Tablespoon|
|Vanilla extract||1 Teaspoon|
|Amaretto liqueur/Marsala wine||1 Tablespoon|
1. Mix cheese, egg yolk, sugar, salt, grated orange peel, vanilla extract, and Amaretto liqueur or Marsala wine. Beat until smooth.
2. Fold in egg whites, beaten stiff but not dry, and pour into pastry shell. Optional. Add one or more of the following to the Ricotta Cheese Filling mixture: 1 tablespoon raisins, diced candied citron, or diced candied lemon or orange peel; or 2 tablespoons slivered blanched almonds, pine nuts, or semi-sweet chocolate bits.
