Rice And Codfish
|Salt codfish||8 Ounce (1 Package)|
|Salt pork||1⁄8 Pound, chopped|
|Onion||1 , chopped|
|Pimientos||2 , chopped|
|Tomatoes||3 , peeled and chopped|
|Olive oil||1⁄2 Cup (8 tbs)|
|Garlic||1 Clove (5 gm), minced|
|Sliced stuffed olives||1⁄3 Cup (5.33 tbs)|
|Water||2 1⁄2 Cup (40 tbs)|
|Raw rice||1 Cup (16 tbs)|
Freshen fish as directed on package.
Cut in small pieces.
Reserve; saute salt pork, onion, pimientos, and tomatoes in oil in skillet until onion is tender.
Add garlic, olives, and capers.
Cook, stirring, for 1 minute; add water.
Bring to boil; add rice and fish.
Simmer for 30 minutes until rice and fish are tender; add salt if necessary
