Fried Rice With Shrimps

Ingredients
  Mushrooms 4 , soaked and diced
  Shrimps 4 Tablespoon
  Scallion stalks 2 , cut into 1 inch sections
  Bamboo shoot slices 2 , diced
  Diced ham 2 Tablespoon
  Salt 1⁄2 Teaspoon
  Cooked rice 5 Cup (80 tbs), cold
  Eggs 3 Small, well beaten
  Soy sauce 1 Teaspoon
  Oil 1 Tablespoon
  Oil 3 Tablespoon (For Rice)
Directions

Wash and soak the mushrooms in 1/2 cup hot water for 30 minutes and then stem and dice.
Shell and devein the shrimps and dice into the same size.
Heat a pan with oil and when it is hot saute the mushrooms and bamboo shoots for 1 minute.
Add the shrimps, ham, scallions and salt.
Stir once or twice and then set aside.
Heat a large pan with the 3 tablespoons oil and when it is very hot add the rice and stir vigorously.
Separate the rice with chopsticks or spatula and when it is very hot, add all other ingredients except eggs and mix well.
Pour the eggs in last, raise the heat for 30 seconds and then turn it off.
Keep stirring till the eggs coagulate.
Turn into a shallow bowl and serve immediately.
