Rice With Duck
|Onions||2 , chopped|
|Butter||1⁄2 Cup (8 tbs)|
|Mint sprigs||3 , chopped|
|Black pepper||1⁄4 Teaspoon|
|Cumin seed||1 Tablespoon|
|Sunflower seeds||3 Tablespoon, ground and shelled|
|Garlic||3 Clove (15 gm), ground|
|Duck||4 Pound, cut into serving pieces|
|Salt||1 1⁄2 Teaspoon|
|Water||2 1⁄2 Cup (40 tbs)|
|Raw rice||1 Cup (16 tbs)|
|Chili powder||1⁄2 Teaspoon|
Cook onion in butter in skillet with mint, peppercorns, pepper, cumin seed, sunflower seed, and garlic.
Brown on all sides; add salt and water.
Bring to a boil.
Cook for 20 minutes; sprinkle rice around duckling; cover.
Simmer for 25 to 30 minutes, sprinkle marjoram, chili powder, and brandy over rice.
Mix lightly, place duck in center of platter.
Surround with rice
