Rice And Beans
|Dried kidney beans||1⁄2 Cup (8 tbs)|
|Salt pork||2 Ounce, cubed|
|Diced scallions||1⁄4 Cup (4 tbs)|
|Salt||1 3⁄4 Teaspoon|
|Water||2 Cup (32 tbs)|
|Coconut milk||2 1⁄2 Cup (40 tbs)|
|Raw rice||1 Cup (16 tbs)|
soak beans in water to cover for 8 hours, or overnight.
Drain brown salt pork in skillet; add scallions.
Cook until tender, add to beans with 3/4 teaspoon salt and 2 cups water; cover.
Simmer for 1 1/2 to 2 hours; add thyme.
Simmer for 10 minutes; add remaining salt to coconut milk in saucepan.
Bring to a boil; add rice gradually.
Simmer for 25 minutes, or until rice is tender.
Combine beans and rice.
Serve on lettuce leaves, topped with additional pieces of browned salt pork.
