Wild Rice with Shallots and Green Peppers
|Wild rice||1⁄2 Pound (225 Grams Or 1 Cup)|
|Water||1 3⁄4 Pint (1 Liter Or 4 Cups)|
|Chicken stock cube||1|
|Butter||2 Ounce (50 Gram Or 1/4 Cup)|
|Shallots||2 Small, finely chopped|
|Green pepper||1⁄2 Small, chopped|
|Celery stick||1 , chopped|
|Walnuts||2 Ounce, chopped (50 Gram Or 1/2 Cup)|
|Freshly ground black pepper||To Taste|
1 Soak the wild rice in water overnight, drain and wash well 2 Put the water, stock cube and salt in a saucepan, bring to the boil and add the rice.
Cook for about 40 minutes until tender.
3 Melt the butter and saute the shallots, green pepper and celery for 3 minutes.
4 Add the walnuts, pepper and wild rice and serve as a dressing for game.
