Ingredients
  Onion 1 Small, chopped
  Thinly sliced celery 1⁄2 Cup (8 tbs)
  Uncooked long grain rice 1 Cup (16 tbs)
  Fat-free chicken broth 2 1⁄2 Cup (40 tbs)
  Frozen black eyed peas/One 15 ounce canned black eyed peas 10 Ounce (1 Package)
  Chopped cooked ham 1⁄2 Cup (8 tbs)
Directions

Place the onion and celery in a large nonstick skillet coated with nonstick cooking spray; cook over medium heat for 5 minutes or until softened.
Stir in the rice, chicken broth and black-eyed peas; bring to a boil.
Reduce heat to medium-low and simmer for 15 to 20 minutes or until rice is tender.
Stir in the ham and serve.
