Nancy's Pork Rice Skillet
|Boneless pork||1 Pound, cut in 2 x 1/4 inch strips|
|Chopped onion||1⁄2 Cup (8 tbs)|
|Water||2 1⁄2 Cup (40 tbs)|
|Converted rice||1 Cup (16 tbs)|
|Chili powder||2 Tablespoon|
|Diced green pepper||1⁄2 Cup (8 tbs)|
|Frozen succotash||10 Ounce, thawed (1 Package)|
Brown pork and onion in a large skillet; sprinkle with 1/2 teaspoon salt.
Stir in water, rice, chili powder and remaining salt; bring to a boil.
Simmer, covered, 15 minutes.
Stir in green pepper and succotash; simmer, covered, 5 minutes longer.
Remove from heat; let stand, covered, until all liquid is absorbed, about 5 minutes.
Top with diced tomato if desired.
