Nancy's Pork Rice Skillet

Ingredients
  Boneless pork 1 Pound, cut in 2 x 1/4 inch strips
  Chopped onion 1⁄2 Cup (8 tbs)
  Salt 1 Teaspoon
  Water 2 1⁄2 Cup (40 tbs)
  Converted rice 1 Cup (16 tbs)
  Chili powder 2 Tablespoon
  Diced green pepper 1⁄2 Cup (8 tbs)
  Frozen succotash 10 Ounce, thawed (1 Package)
  Diced tomato 1
Directions

Brown pork and onion in a large skillet; sprinkle with 1/2 teaspoon salt.
Stir in water, rice, chili powder and remaining salt; bring to a boil.
Simmer, covered, 15 minutes.
Stir in green pepper and succotash; simmer, covered, 5 minutes longer.
Remove from heat; let stand, covered, until all liquid is absorbed, about 5 minutes.
Top with diced tomato if desired.
