Shrimp With Red Rice
|Oil||1⁄4 Cup (4 tbs)|
|Chopped onion||1⁄2 Cup (8 tbs)|
|Garlic||1 Clove (5 gm), minced|
|Green pepper||1 Medium, seeded and sliced in 1/2 inch strips|
|Shelled shrimp||1 Pound (Green Variety)|
|Tomato paste||6 Ounce (1 Can)|
|Water||2 1⁄2 Cup (40 tbs)|
|Uncooked rice||1 Cup (16 tbs)|
Heat oil in a large, heavy saucepan.
Add onion and garlic and cook until soft (about 5 minutes).
Add green pepper and uncooked shrimp and cook until shrimp turn pink.
Stir tomato paste, water, and seasonings into shrimp mixture and bring to boiling.
Add rice; mix well.
Cover and simmer over very low heat until all liquid is absorbed by rice (about 25 to 30 minutes).
