Simple Coconut Rice
|Raw rice||2 Cup (32 tbs)|
|Onions||2 Cup (32 tbs), chopped finely|
|Coconut milk||4 Cup (64 tbs)|
Wash the rice in several changes of water; drain.
Heat the oil in a skillet; saute the onions 10 minutes, stirring frequently.
Add the rice, salt, coconut milk, and enough water to just cover the rice.
Cover and cook over very low heat for 20 minutes, or until tender.
